Homemade Dressings

There are so many amazing homemade salad dressings out there on the web.

Here are a few of my favorites!

Creamy Thai “Peanut” Dressing

1/4 cup sunflower seed butter
1 tablespoon raw apple cider vinegar
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 tablespoon tamari or coconut aminos
3 tablespoons honey
2 garlic cloves, minced
1-inch knob of fresh ginger, peeled and chopped
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/4 cup water, or more for a thinner consistency

Combine all of the ingredients in a high-speed blender, and blend until completely smooth. Add more water, if a thinner consistency is desired, then serve over your favorite salad ingredients!

Ginger Dijon Vinaigrette

1 tablespoon apple cider vinegar
2 tablespoon olive oil
1 teaspoon dijon mustard
1/2 teaspoon ground ginger
1 pinch ground parsley
sprinkle of salt & pepper

Combine all ingredients in a glass jar and shake to combine. Use as a topping for your favorite salad. Or, as one reader did, as a marinade for pork! Mmm!
